Gift Oluwatofunmi EWUOLA holds a Ph.D. in Food Science and Technology from the Obafemi Awolowo University, Nigeria with research specialization in Product Development, Food Preservation, Food Biotechnology, and Food Nutrition with focus on developing natural preservatives in extending the shelf life of food and optimizing indigenous food materials for optimum nutrition. Her interest recently intrigued her to volunteer as a member of a collaborative research between Nigeria Institute of Food Science and Technology and Wageningen University and Research (WUR) encouraging consumption of additional Green Leafy Vegetables (GLV) by consumers of street-vendor foods. Her dedication to product development, safe processing, preservation and packaging of foods and nutrients won her the TETFUND Alliance for Innovative Research Fellowship. She is a member of the Nigeria Institute of Food Science and Technology. Her hobbies include reading and singing.
